Ingredients:
- 1 cup of Creole cocoa powder (can be purchased here )
- 1 cup brown sugar or sweetener of your choice
- 1 cup whole wheat flour (or gluten-free flour)
- 1/2 cup coconut oil (or other vegetable oil)
- 2 eggs
- 1 cup of plant-based milk (or cow's milk)
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract (optional)
- A pinch of salt
Instructions:
- Preheat the oven : Preheat the oven to 180°C (350°F) and grease a baking tin with oil or butter.
- Mix the dry ingredients : In a large bowl, mix together the Creole cocoa, brown sugar, flour, baking powder, and salt.
- Add the wet ingredients : In another bowl, beat the eggs and add the coconut oil, milk and vanilla extract. Mix well.
- Combine the mixtures : Pour the wet mixture into the bowl of dry ingredients and mix until smooth.
- Bake : Transfer the batter to the greased pan and bake for about 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and serve : Remove the cake from the oven, let it cool for a few minutes and unmold. You can serve the cake plain or sprinkled with powdered sugar.
