Criollo Cocoa Cake

Ingredients:

  • 1 cup of Creole cocoa powder (can be purchased here )
  • 1 cup brown sugar or sweetener of your choice
  • 1 cup whole wheat flour (or gluten-free flour)
  • 1/2 cup coconut oil (or other vegetable oil)
  • 2 eggs
  • 1 cup of plant-based milk (or cow's milk)
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract (optional)
  • A pinch of salt

Instructions:

  1. Preheat the oven : Preheat the oven to 180°C (350°F) and grease a baking tin with oil or butter.
  2. Mix the dry ingredients : In a large bowl, mix together the Creole cocoa, brown sugar, flour, baking powder, and salt.
  3. Add the wet ingredients : In another bowl, beat the eggs and add the coconut oil, milk and vanilla extract. Mix well.
  4. Combine the mixtures : Pour the wet mixture into the bowl of dry ingredients and mix until smooth.
  5. Bake : Transfer the batter to the greased pan and bake for about 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool and serve : Remove the cake from the oven, let it cool for a few minutes and unmold. You can serve the cake plain or sprinkled with powdered sugar.
